Unlike most vegetables, where the smaller and thinner ones are more tender, the thick spears of asparagus have a higher tender volume in proportion to their skin.
The best asparagus are the ones that are collected and cleaned while the water is boiled. Meticulous chefs scrape the asparagus stems with a vegetable peeler, avoiding the yolks, and chill them in ice water before boiling them; often the skin is incorporated into the cooking water and removed when the asparagus is made, presumably to avoid diluting the flavor.
In its simplest form, the spears are cooked in water or steamed until tender and served with a light sauce (like Dutch or mayonnaise) or with melted butter or with a few drops of olive oil and grated Parmesan cheese.
